The Coelsanus

Established in the Vicenza province of north east Italy in 1955, Coelsanus produces preserved vegetables. The company is located in the area around the village of Sossano which is recognised as one of the most fertile areas of Italy with the perfect climate for growing vegetables. The Latin name, Coelsanus, originates from the heraldic coat of arms... of the region and literally means 'clean and healthy sky' - perfect for cultivating both vegetables and fruit. The tradition of preserving vegetables is characteristic of rural Italian households and is continued to this day by Coelsanus using the same, natural methods. The first stage of the production process is the careful selection of the freshest vegetables which are then washed, blanched and finally marinated in oil, vinegar or brine. The resulting pickled vegetables represent an element of 'Italian antipasti', a tradition which is famous across the world. Working very closely with local farmers to help to improve farming techniques has led Coelsanus to establish its own farm 'Millefrutti' specialising in silverskin and borettane onions. Coelsanus is focused on quality and as such uses only the freshest, seasonal vegetables which are carefully selected through a quality controlled supply chain.
