We have a spectrum of peppers and flavors coming your way, starting with our inaugural Trips Eclipse: delivering the datil pepper, native to and successfully grown only in Floridas first coast, accompanied by a chorus of peppers and tangy lime. It will transport you to sunny shores, no matter where youre dining. And now, we proudly offer Caribbean Sun: a fresh tropical fruit hot pepper sauce, featuring a delicate mango and pineapple crest atop our traditional wave of peppers. Grown successfully only on Floridas first coast, as originally cultivated by the Minorcan people of its early Spaniard settlement, this pepper flashes an intense heat and leaves you with the pleasant tartness of citrus. We grow a variety of citrus in our home orchard, and pair peppers with everything from lemons to tangelos. However, nothing seems to match the elevation of a datil peppers peaks like lime. These small but mighty fruits offer flavor and preserve this sauce naturally. After mixing, matching, tasting, thinking, and repeating the process about a hundred times, we settled on this combination and proportion of jalepenos, serranos and habaneros to accompany the signature datil pepper.
