It began in 2001 during Matt Bucy's renovation of the Tip Top building where they made Tip Top Bread in the 1940's. The original Tip Top was actually a café with counter service offering coffee and light meals. With new ownership the name changed briefly to Low Brow, and then back to Tip Top Cafe when Eric Hartling started his restaurant here in 20... 05. The current owner Eileen McGuckin managed the restaurant for Eric for 5 years before purchasing the business in August of 2013. After many years of restaurant work in New Jersey and the Upper Valley owning my own restaurant was a dream come true. White River Junction, though familiar, was changing and it was very exciting to be part of it. The Tip Top as I have known it was never your "ordinary café" and has not been a café in the true sense of the word for a long time. There have been some gradual changes over the past four years with more apparent changes since the beginning of 2017. We have a new look. We have shifted the focus in our cuisine to increased use of locally sourced ingredients. The name Thyme helps me to personalize my business and to be more of a true reflection of what we do. Please join me in celebrating what the beloved Tip Top once was and what Thyme will become. We look forward to serving our dedicated clientele and new customers.
