Hilderbrand's journey into craft beer began during his service as a Russian linguist with the U.S. Army in Germany during the early 1990s, where he developed a deep appreciation for German beer culture and flavors. Years later, after receiving a home brewing kit from his wife, Hilderbrand's hobby gained traction among friends and family, prompting him to explore commercial brewing possibilities. Recognizing the financial constraints of launching a brewery independently while maintaining his full-time role as a Fire Captain, Hilderbrand partnered with Gordon, an engineer and firefighter who leveraged his fabrication skills to design and build custom, commercial-grade brewing equipment. Gordon's background included founding The Slaughter House, Tucson's high-tech commercial haunted house attraction, demonstrating his capability to execute complex technical projects. The founding team faced numerous obstacles during the brewery's development, but the addition of Taylor Carter, a paramedic and firefighter with strong marketing and business acumen, provided the final operational and strategic component needed to launch the venture successfully.
