Senor Taco started in San Diego over thirty years ago at a placed called Cotijas Mexican Grill. Thats the restaurant David Ruiz opened in order to give Southern Californians a taste of the authentic Mexican food he grew up with. He took his time to make sure that the recipes he used and the ingredients he selected stayed true to his roots. It wasnt... easy because creating these dishes takes time and begins early in the morning. But Cotijas was a big success and it became world-renown for its spectacular shrimp burrito. In addition to launching Southern Californias first authentic Mex restaurant, David inspired his son Reynaldo to bring the same traditional, Mexican fare to California. Twenty years later Rey opened Senor Taco in Fountain Hills to the same kind of accolades his father received on San Diego. Today the Cojita spirit thrives in the Arizona desert.
