In 2005 Brent Hernandez was thirsty for craft beer. While a few bars and restaurants carried a small selection of craft products , none met the diversity Brent desired. Brasserie d'Orval is one of the 11 Trappist breweries in the world! And brews one of the most unique beers of them all. It gets its uniques flavor from dry-hopping and also the addition of wild yeast! Fresh Orval is great, somewhat dry, slightly hoppy, but if you let it age a little, the wild yeast helps dry it out and give it a much more complex flavor. 6.5% ABV Brewed to a colossal 45P, boiled for a full 2 hours while being continually hopped with high alpha American hops, dry-hopped every day in the fermenter for a month, and aged for a month on whole leaf hops, 120 Minute IPA is by far the most intense IPA's ever brewed. 16.5% ABV Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing Off Color Brewing brought in (it still has to stay in the corner though). They blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. They blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel.
