We know exactly when our EVOO's have been crushed. We import from both the Northern and the Southern hempishere which means we receive FRESH EVOO's TWICE a year. All of our balsamic vinegars are imported from Modena, Italy and have been aged up to at least 12 years with the exception of our Traditional which as been aged up to 18 years!
