When we began to study food preparation for those with gluten intolerances or celiac disease, we learned tha... t most gluten-free recipes are not as healthy as described in the media. In many cases, the list of ingredients is extremely long and contains items that are hard to recognize, let alone pronounce. These extra ingredients are usually added to camouflage the taste of commonly used gluten alternatives, and often consist of processed sugars, syrups or other harmful additives. Gluten-free products that are widely available often contain rice flours and starches, with are not good for daily consumption. As we learned more, we began to introduce healthier grains to our products while ensuring that the taste and textures remain pleasant. That's how we started to use sorghum, quinoa, buckwheat, millet, teff, amaranth, coconut and garbanzo flours. While some of our recipes contain tapioca, our signature sourdough bread is free from all starches and sugars. We understand that all people are different when it comes to dietary restrictions and preferences. Even with common allergies, there is always someone who has special requirements. We're able to modify most of our recipes upon request to help those with a unique sensitivity or intolerance.
