Katerina's immense experience convinced her to start her restaurant. This was to be a unique restaurant because it catered to people looking for Italian cuisine. She moved to New York in 1997... , where she planned to launch her restaurant. She looked for an optimum location in downtown New York where there many lovers of Italian food. After hiring a qualified team of chefs and waiters, she launched the business in 1998. Katerina was heavily involved in the restaurant's management during the first few years of its operation. Katerina ensured that each meal was prepared according to the highest standards. She also doubled up as a chef and a waiter during high-traffic hours. As a result, the restaurant's profit dramatically increased within the first five years. The restaurant began receiving so many visitors that Katerina decided to move it to a new location.
