Amaranth was a staple food of the Aztecs. They considered amaranth one of the sources of their strength and power, helping them win wars and carry on with their day-to-day lives. They, however, did not call it amaranth...they called it Huautli. Since that time in history, Amaranth has been quite common in Mexico. It is mostly presented with raisins and molasses as a granola-style mix called alegria--literally meaning happiness--because of amaranths simple and delicious nutty flavor, resilience to weather, and nutritional value.
