Necessity is the mother of all inventions. Year after year, I grow more tomatoes than our family (and neighbors) can eat. Always looking for a way to quickly use them, I roasted them on the barbecue and dressed them up with tomato's best friends - olive oil, salt and garlic. We devoured it. Straight from the pan. And then begged our tomatoes to gro... w faster so we could make more! Over the years, the recipe has evolved and become a staple in our home. Now running a gift company that specializes in artisan-quality goods from our greater Portland neighborhood, I've struggled to find a locally made, shelf-stable dip to include in our gift sets. After years of looking, I decided it was time to make it myself. Hello Good Roots & Co. We're lucky to live in Oregon where fresh produce and quality ingredients are a bounty! The tomatoes come from an Organic farm south of Portland, the olive oil is made by Oregon Olive Mill at Red Ridge Farms in Dayton, and the Kosher salt is harvested from the Oregon coast by Jacobsen Salt Co.
