Fabian's was founded in 1995 by Fabian Puebla from Quito, Ecuador. His journey was not a straight line to America but took him across much of the Latin world where he experienced many of the world's cultures and indulged his passion for food. As more and more people spread the word about Fabian's, the business grew and so did the menu.
