At Del Posto, we're proud to serve Devoción coffee. Our team visited their roasting plant and retail this store in Williamsburg to check out the operation. There, we learned about the incredible amount of detail that goes into their coffee-from sourcing in the fields in Colombia all the way to roasting in Brooklyn. Since opening its first roaster i... n Bogot in 2006, Devoción has dedicated itself to finding high quality artisanal beans. Nelson Vargas, the company's quality-control manager, spends his weeks in Colombia's mountains checking in on the constellation of 400 farms that contribute to Devoción's output. Vargas and founder Steven Sutton work with farmers whose land looks as if has been abandoned and left to grow wild. We use Devoción's Wild Forest blend that Sutton and Vargas source from the Colombian state of Huila. According to Devoción, "the owners of the farms, two brothers, immediately welcomed us and invited us to try their coffee. As we began to cup the lots, we quickly recognized thequality of the beans, so we negotiated a price above fair trade, and thus,Devoción's Wild Forest coffee was born." These beans are shipped to Brooklyn where they are roasted in a state-of-the-art Probat roaster. We receive the beans shortly thereafter and grind them for each drink we serve.
