Water-Chilling is the most common practice, where processed birds are piled into large vats of ice water. While the birds sit in these water baths, they become water logged. Because the birds comingle in the water for hours, whatever pathogens one bird carries can be passed to other birds. To reduce this risk, processors fill those water vats with chlorine or, now becoming just as popular, T.S.P. (trisodium phosphate), which you can find at your local hardware store.
