In 2017, I began my journey to wellness. I was overweight, not in good physical shape and felt poorly. At that point, I decided to join Weight Watchers and began exercising on a regular basis. I was having weight loss success but I was continuing to experience a lot of joint pain. Feeling frustrated and not wanting to take additional arthritis medications, I sought out the advice of a naturopath. He recommended several blood tests for food allergies and Celiac Disease. My results showed I was allergic to dairy, eggs, gluten, all grains, wheat, cane sugar, yogurt, yeast, garlic, sesame and various other foods. In addition, I had a positive genetic marker for Celiac Disease and was told if I continued to eat gluten I would most likely test positive within six months. I accepted that I needed to change my diet. As soon as I began eliminating these foods from my diet, I started to feel better. Then the reality set in, how in the heck am I going to do this? I had already made many healthy changes to my diet, however this was so much more restrictive. I had to adjust my cooking style and learn how to hack recipes. While I prepare most meals, I have also learned how to eat out successfully. I started the Bleu Plate Special blog to provide advice, tips, recipes and share my experiences as I continue on my wellness journey. I finally realized that food has a direct correlation to the way I feel. I am a firm believer that information helps you make better decisions.
