Trained in Italy at the Scuola Italiana Pizzaioli by World Champion Pizza Maker Graziano Bertuzzo, Restauranteur Mark Paterno has been striving to give Australian customers a better pizza since 1984 when he began working in his familys pizzeria in Haberfield. Since then hes dished out traditional Italian pizzas in his own restaurants including Golo... sia, Crows Nest and Arriva, New Farm, where he won Best Traditional Pizza four years in a row in the Dairy Farmers Best of the Best Pizza Competition, and Best Pizza Restaurant awarded by Restaurant and Catering QLD, and now Arte Bianca, Double Bay. Arte Bianca or white art is a term dough technicians use for their craft and at Arte Bianca Restaurant youll bite into Romana-style hand stretched classica pizzas that were born from a lifetime of passion and experience. Mark competes yearly in the World Pizza Championships held in Italy and in 2015 became the Australian World Champion for his Tartufata pizza, a best seller at Arte Bianca.
