Scott Callais
General Manager Scott Callais brings to Juban’s Creole Restaurant & Caterer a wealth of hospitality management and food and beverage experience. Waiting tables and bartending in the 1970s during his college years at LSU, Scott developed a passion for the restaurant industry. At the age of 24, Scott had already made it to the position of General Manager at Ever Loving Saturday’s Restaurant on Corporate Boulevard in Baton Rouge. It was at the City Club of Baton Rouge, as Maitre d’, Scott was mentored by Club Manager Hans Brandl on proper table side service and the appreciation of fine wines. From there, Scott went on to become the Maitre d’ Hotel of the Mississippi Queen Steamboat Company, General Manager of Chef John Folse’s Lafitte’s Landing Restaurant, and eventually Club Manager of the City Club when Mr. Brandl retired in 1989. Mr. Callais served eleven years as Club Manager, and then opened Grand Cru Wine Shop, Deli and Catering. In 1993, Stan Harris, former Vice President of TJM Management, hired Scott as Senior Manager and eventually General Manager of Ruth’s Chris Steak House in Baton Rouge. In the fall of 2008, Scott joined the management team of Juban’s Restaurant. “It was the best decision I’ve ever made in my professional career,� Mr. Callais states. “It’s one of the finest restaurants in Louisiana and the south that has a very professional management core balanced with a great family environment.� “What Scott has brought to Juban’s, our management team, and our food and service staff is vast knowledge and experience in the hospitality industry along with a corporate structure that is needed in every family business,� stated Michael Boudreaux. Scott Callais grew up in the heart of Cajun Country on Bayou Lafourche in Cut Off, Louisiana. He is a graduate of LSU, with a degree in Social Psychology and has been married to Elizabeth ‘Kim’ Callais since 1990. Scott has also been a food and wine consultant for various hospitality establishments, is founding president of the Baton Rouge Epicurean Society, former President of Louisiana and Mississippi chapter of the Club Manager’s Association of America, and a member of the Baton Rouge chapter of Les Chaine des Rotisseurs. With Chef Jaime’s departure in May of 2013, Joey has been promoted to Executive Chef of Juban’s. “Joey loves local products and is great at simplifying the complex and savory flavors of Louisiana cooking then harmonizing them with a variety of cuisines from around the world,� says Scott Callais, General Manager of Juban’s. “With his dedicated service and culinary contributions to Juban’s these past two years, and with his experience of working with some of the best chefs and restaurants in the country, Joey will continue to bring Juban’s cuisine to new heights.�

Juban's manager, Scott Callais, will say only that the restaurant will make an announcement about Juban's Grille in the next few weeks.
According to records filed at the Planning Commission, the new restaurant will be 6,662 square feet and will serve alcohol. This is not Rockenbaugh's first project in the burgeoning area off Highland Road. Last fall, he confirmed plans to open a new Kean's location in the Highland Park shopping center later this year. -Stephanie Riegel
