We are committed to showcasing the terroir of a select group of unique vineyards. We believe that the high quality we seek can only be achieved in certain small, family-owned properties, where commercial interests can be allowed to come second to a vision of quality and expression of terroir. We work with the vineyard owners to practice careful pruning, water management and yield restriction. Thus Westwood's vineyard-designated and Signature wines will always be produced in small quantities. At Westwood we make our wines for maximum enjoyment with good food and good company. Wine is food, and should be approached with equal care and attention to quality. Our commitment to these principles demands that we properly age our wines before release. Through repeated experimentation we have found that as much as two years in barrel and three years in bottle are needed to bring some of our wines to their full potential. Because our wines are bottled unfined and unfiltered, most will throw a sediment with age. This sediment is harmless, but if agitated at serving it can decrease the aroma and flavor of the wine. We suggest standing your bottles up for a day or two before opening, and carefuly pouring into a decanter or carafe to leave the sediment behind. Because our wines have been properly aged before release they do not need to breathe before serving. Once you have decanted a bottle it will change in the glass with time, and it will be enjoyable from the first sip to the last. We recommend serving our wines at 60° to 65°F. We believe that our focus on only two great varietals, our care and attention in the vineyard and winery, and our devotion to proper aging serve to provide you with the purest experience of fine wine.
