No wonder, since chef Justin Schoville is 22 and the pastry chef Ann Young is 25.

One of 11 children growing up in New Prague, Minn., Young was the designated baker in her family."As long as I can remember I loved to bake," she says."Since our family always sat down to dinner together it was up to me to make the sweets at the end."
Following that interest, she worked in local bakeries and shadowed John Schumacher, owner and chef of the famous restaurant of the same name in New Prague.These experiences helped Young decide that baking was going to be her profession.She earned her culinary degree at Cordon Bleu as well.For a time she also was at Daube's bakery here.In addition to her desserts at Sontes, she is responsible for choosing the cheeses, also a dessert option.
