    Bob Witham, co-owner of Two Rivers Winery in Grand Junction, says weather was his No. 1 concern when he opened his winery and vineyard in 1999. He grows grapes near the junction of the Colorado and Gunnison rivers but buys 85 percent of his grapes from other growers. His first priority then was to sign contracts with growers across the valley to help insulate himself from weather problems.

    Witham's harvest in 2007 from his vineyards amounted to 8 tons, compared to a banner production year of 20 tons, so he had to count more than ever on his grower contracts. He also carefully manages his inventory to make sure he has enough from year to year.
