The sugar content will be higher in early spring varieties sold in bunches as compared to larger, woody carrots sold loose in fall and winter, says Eric Wells, produce manager at Winn-Dixie on Fortification Street in Jackson.

"If the leaves are a little bit yellow, the carrots will still be fine," he says.
