Ewan Venters has been in the foodservice industry for three years, following an earlier retailing career with Sainsbury's.Given this experience, he was perfectly placed to identify the differences for suppliers between retail and foodservice.He began with customers and pointed to the diversity of the foodservice customer base - within Brakes for example, it has identified 82 individual customer segments across the 200,000 different customers the company serves.
Ewan also spoke of the differences in terms of product quality, price points, packaging and innovation.
