    Skip Stefansen named NAC Board President; new Board members added

    The NAC Annual Membership meeting at SBU/EXPO in Anaheim included the election of Skip Stefansen as the new NAC Board President.Stefansen, executive vice president of Liberto Management Company, San Antonio, TX, has been involved in the concessions industry for over 30 years.

    In 1992, Stefansen was awarded the association's highest honor, the Bert Nathan Memorial Award.This annual award is given in recognition of a member's endeavor to promote the professionalism of the concessions industry, as well as for leadership in the association.

    Stefansen began his career in concessions selling candy for the Roy J. Allen Company.In 1983 he joined Metropolitan Theatres as director of concessions, and in 1986 was named president of Metropolitan Concessions (now Metropolitan Provisions) in Industry, California.

    Stefansen joined the Liberto Management Company, San Antonio, Texas, as executive vice president in 1998.Stefansen and his wife Linda live in Fair Oaks Ranch, Texas.He has three daughters: Nikki, Kjersten and Adriane.

    "I have not seen any appreciable effect on per capitas," states Skip Stefansen of Metropolitan Theatres."There's really been no impact on popcorn sales or other products."Stefansen notes that while bottled water sells well at his theatre circuit, with full and half-liter offerings, "soda still outsells water 100 to 1."He also notes that "the age group that goes to the movies the most often, the 14 to 23-year-old ages, may not be the group that is worried about their diet."

    The concessions industry has often been somewhat immune to diet trends, as many people perceive a trip to the concession stand as part of the entertainment experience, and not one they are willing to give up, or alter."People treat themselves when they go out," says Stefansen.Stefansen is an personal advocate of the low-carb based South Beach Diet, but notes that the diet uses the term 'treating', not 'cheating'."When I go to the movies, I still treat myself to a hot dog, popcorn and a soda," states Stefansen.

    Now, said Skip Stefansen, vice president of concessions for Metropolitan Theatres, soy-based buttery flavorings are used on popcorn in 90 percent of movie theaters nationwide.

    In general, real butter can cost five times more than imitation topping, but at Metropolitan Theatres, the decision to go faux involved health concerns.

    "Soy is better for you," said Mr. Stefansen.

    But does it taste better than butter?

    "There is a difference in taste.The flavor profile for butter is obviously different, but some people actually prefer the soy topping," said Mr. Stefansen."It's a matter of taste."

    He noted that the "real butter" touted by some movie chains is actually clarified butter.
