Schwartz, who is Henry Schwartz' cousin, said the rising cost of corn, which is used in cow feed and to create ethanol, have contributed to the surge in the price of milk.
Milk from upstate farms is being processed at other facilities outside of the city until the dispute is settled.
"The industry is going through a major consolidation and it is trying to survive the turmoil," Schwartz said.
