   Dan Rosenberg, owner of Real Pickles and the aforementioned six tons of cucumbers, said his business would be nothing more than a dream without the center.
   
   "It would be a real struggle without this place," Rosenberg said. "The number one obstacle to growth is space and the center has given me the room to grow."
   
   During his first year in business, Rosenberg made his naturally fermented pickles and sauerkraut after hours in a kitchen in Amherst. He said only two other companies in the country use the natural method of pickling without vinegar, and sales took off.
   
   He started his business as a way to support local farmers and promote healthy eating. His product is now in 55 stores around New England and New York. Along with the cucumbers, he has reserved 10,000 pounds of cabbage from area farmers.
   
   "I only use certified organic produce, and the local farmers I work with are benefiting from the center's success and mine," Rosenberg said.
