The Oakland Tribune carried an article this week on the Miette patisserie in Oakland that, its owner Megan Ray, would like to see as the first organic patisserie in North America.
Ray describes the business as "a traditional French patisserie with organic and more raw ingredients."

But Ray has her eye on a prominent retail outlet.
Miette's recipes employ butter and cream from Straus Creamery, an organic dairy in West Marin.The cream is turned into creme fraiche at the Cowgirl Creamery in Point Reyes, a maker of artisan cheeses.Eggs come from the Petaluma Egg Farm, and raw sugar from Multiple Organics in Richmond.But the end products, though "not light and fluffy like the classic French model," bear little resemblance to the grimly virtuous baked goods we're accustomed to seeing at health food stores.
Miette has been in business for a year.

Its product list includes Brioche, Plum Buckle, Coconut Cake, various types of pound cake, Quince Thumbprints, Lavender Shortbread, Lime Sugar Cookies, fruit tarts including pear, fig, lemon and French apple ("These are my favorites," says Ray), gingerbread and cheesecake.
