Gavin McCaffrey, director of catering and conference services at the Fairmont Hotel, said the company Christmas party season starts in mid-to-late November and runs until about a week before Christmas.

McCaffrey said the larger events -- company parties with 700 guests -- are typically booked a year in advance.
