Justin Markos, head chef at Grand Mercure Mount Lofty House, was the joint winner of this year's Dan Pontifex Memorial Award Hospitality scholarship.As part of his scholarship, Justin is currently on an 8 week culinary journey through Europe working in top restaurants such as Claridges (Gordon Ramsey), Kensigton Place and La Gavroche (Michael Roux Jr.), in London and Willis Wine Bar, in Paris. -

Justin believes he has achieved a great deal during his time as a chef.
As an apprentice at the renowned Chloe's Restaurant, his training enabled him to refine and develop skills in all areas of classical French and Mediterranean cuisine.
The 22 year old's accolades are endless.They include the Best Dessert category of the Boral Top Hat Awards, final apprentice top student in his class, a silver medal at the Workskill cooking competition, silver and gold medal at the Origin Energy Top Hat Awards and Top Hat Champion Cook for 2000.Justin has also had an original recipe published in the South Australian cookbook "Ripe".
Apart from recently being promoted to Head Chef at the Botanic Cafe Justin is actively developing his own mobile dinner party business and lecturing in the ‘Kidz in the Kitchen' program at Regency TAFE. -
