Every week, Allen Hirsch, co-owner of Donna's, or founder Donna Crivello herself oversees a wine tasting with appetizers.
    ...
Hirsch, who creates the wine list for the Donna's chain of restaurants, is a fan of rosé.For hot weather he recommends Bon Bon Rosé from Australia: "It's like drinking candy. It's not sweet, but it has the flavor of strawberries."

He also raves about sparkling Shiraz, something relatively new to the American market.Served cold, he says, it's the perfect summer accompaniment for meat: "You have the depth and richness of a red, and the bubbles help to cut the fat."

Alan Hirsch, president of Donna's, says he will remain open at the present Bibelot locations and that landlords at those spots are supporting the coffee-bar chain."We're confident that workable situations will happen in Pikesville and Timonium," Hirsch says.Sources say that Borders is already sniffing around those two locations, although a spokesperson at the company's headquarters in Michigan wouldn't comment.

The situation in the city Bibelots is more tenuous.Big-box bookstores prefer more space than the 16,000 square feet Struever can offer them in Canton. He says he'll continue to look for an independent bookseller, "even though they're rare."

Alan Hirsch, co-owner of Donna's, a coffee bar and restaurant that has been operating at the site since Bibelot opened in 1995, said that Donna's has sent a flyer to its customers announcing that it is leaving the location by Friday October 18.

"We thought we might come back to the location but now it doesn't look likely we'll reopen in the location," Mr. Hirsch said.

Bibelot's closing came as a surprise to its many local customers, and was the subject of much media attention.Since then, there have been temporary tenants at the Pikesville site, including Book Market, a discount chain.

The renovations, which will be completed in November, are part of the overall makeover at the shopping center, as well as an attempt to give the 5-year-old store a facelift, said Alan Hirsch, Donna's co-owner.

Donna's has also spent $15,000 on landscaping at Cross Keys, giving its outdoor deck patrons the feeling they are sitting in a garden full of cherry tomatoes, parsley and peppers, Hirsch said.

The 3,000-square-foot Donna's in Columbia has begun offering more ambitious food items, such as stuffed grilled pork chops, rather than the usual salads and sandwiches.

The decision to shift its focus comes after Donna's quietly closed its Clarksville restaurant and a cafe in the Borders book store in Annapolis Mall last spring."We weren't happy with the volume in either," Hirsch said.
    ...
An undisclosed hospital in that city is considering licensing the Donna's concept, Hirsch said.
