Richard Ekkebus - Executive Chef
One of the culinary world's most exciting young personalities, Richard Ekkebus, is Executive Chef at The Landmark Mandarin Oriental, overseeing all cuisine at Hong Kong's most luxurious and contemporary hotel - in particular, at the hotel's iconic signature restaurant, Amber.
Ekkebus began his illustrious career via an apprenticeship in his native Holland under Michelin starred chefs Hans Snijders and Robert Kranenborg.
...
It was here that the heady mix of French, Creole, Dutch and Indian heritage of Mauritian cuisine allowed Ekkebus to give free rein to his creative imagination, and he quickly established a name for himself with innovative dishes such as fragrant spiced lamb shoulder cooked for 11 hours with plantain mousseline and long beans; a ‘Mikado' of Cacao Rasgoula enhanced with cardamom, "Grand Cru" Jivara chocolate and Chamarel Arabica coffee ice cream. After seven successful years he moved to another legendary property, The Sandy Lane in Barbados, where the wide-ranging culinary traditions of the Caribbean further seduced him.
Recognized as one of the most exciting culinary talents today, Ekkebus has already been featured in several books on the world's greatest chefs, and has cooked for top international celebrities from Tiger Woods and Michael Jordan to Beyonce and Andrew Lloyd Webber.
...
"At Amber, I combine my traditional French training with my love for the simplicity of Asian and Southern European cuisine to create a range of exuberant and vibrant dishes presented with creativity and technical skill," says Ekkebus.
His innovative approach to cuisine extends to all meal periods, including breakfast where, instead of the traditional breakfast cereal, Ekkebus introduces home made cereal bars with sour dough bread shavings, and Mediterranean frittatas.
Of course, it is the dinner menu where one can truly experience the superb range of his creative talent.Connoisseurs of haute cuisine can sample truly innovative dishes and flavour combinations, many of which will are new to Hong Kong, with his signature creations, including transparent Gillardeau oysters and cucumber ravioli; sesame oil seared yellow fin tuna cubes with crispy chicken skin; and marinated strawberries with thin Italian meringue sheets. -

Thanks to FFB we had been included in a British Food Promotion in Hong Kong last November and had been chosen by the charming Executive Chef, Richard Ekkebus, of the Landmark Mandarin Oriental to be featured on their menu.I had emailed the Amber Restaurant to make a dinner reservation and had received a courteous reply confirming it, and also asking if I was celebrating a special occasion. When I replied that I was visiting as their salt maker I had a warm and friendly exchange of emails with Richard. On our arrival we were greeted with a complimentary glass of Champagne and Richard came out to discuss the menu.He kindly prepared the following special tasting menu which was so outstandingly delicious that it deserves to be reproduced in full.

In the afternoon I had a meeting with Richard Ekkebus, kindly arranged by Kelly of FFB.He was keen to do more business and very kindly got out his Supplier book and leafed through it looking for a distributor for our sea salts.

Back at the show I checked out the two names Richard had given me, one, a British company and the other with branches in Hong Kong and Macau. -
