   Bill Dunn, fine wine specialist for the Republic Beverage Co., helped judge the entrée portion of the event and checked food for everything from the spices and the cooking process to the temperature at which the dish was served. Dunn sampled a variety of dishes and worked to maintain an unbiased palate by drinking and gargling with water or eating unsalted crackers or French bread between tastings.
   
   "We spit the food out like we would for wine tasting," Dunn said.
