The program at St. Ignatius College Preparatory proved that today's youth are concerned about their environment and are willing to make the extra effort required to improve it , stated SWMP Technical Assistant for Schools , Krista Danielson. Overall , the Cafeteria to Compost effort reduced the amount of materials going to the landfill by 50 % , from 36 cubic yards of waste per week to 18 cubic yards of waste with the remaining 18 cubic yards being recycled through composting. This diversion is in addition to the 24 cubic yards of paper that was already being recycled every week. Now that we know it can be done successfully , the City hopes to see more schools follow St. Ignatius' lead , Danielson added.

The Compost to Cafeteria program is part of a comprehensive food scrap collection effort sponsored by the SWMP and the California Integrated Waste Management Board to promote recycling and meet the requirements set by AB 939. The California Legislature in enacting AB 939 found that the reduction , recycling , or reuse of solid waste generated in the state will , in addition to preserving landfill capacity in California , serve to conserve water , energy , and other natural resources within the state and to protect the state's environment. In the St. Ignatius project , SWMP partnered with Biocorp who provided the biodegradable bags to the school , and Sunset Scavenger who collected the organic matter. The program addressed the findings of a 1996 SWMP study , which showed that food waste comprised nearly 20 % of San Francisco's waste stream. For commercial waste stream including schools , institutions , restaurants and businesses the organic waste generated can reach up to 45 % of the overall amount of waste.

St. Ignatius separated waste into three categories : organic products including all food products , landscaping , paper towels and napkins ; recyclables , including paper , bottles , cans ; and non-recyclable garbage products.
