   Chef Ralph Croteau
   
   Ralph Croteau, Executive Chef Dolce International/ IBM Learning Center Ralph began his career in 1976 with Croton Colonial Restaurant as a pantry cook.
   
   He then moved on to Le Chambord Restaurant in Westport Ct. in 1979 where he completed a two year apprenticeship under Chef Robere Pouget. He learned all aspects of cooking such as garde manger, grilling, sautee, butchering and expediting during this time.
   
   In 1982, Ralph took a position as Executive Chef at 606 Restaurant a Cajun style restaurant in Austin, Texas until 1990. During his tenure he received honors by Texas Monthly for the "Best Seafood Gumbo in Texas". Ralph also won the Peoples Choice award at the annual Spam-O-Rama in 1983 for his Spam with Sauce Supreme.
   
   He returned to New York in 1990 and joined Marriot Corporation at the Edith Macy Conference Center and Thornwood Conference Center.
   
   In 1996, Ralph became the Food Production Manager at the IBM Learning Center and assumed the position of Executive Chef in 2003. Ralph's favorite meal is pizza, salad and beer.
   
   He also cooks for his family on his day off.
