The duck industry has worked hard to persuade retailers to place the birds in butcher cases, says Doug Corwin, president of Crescent Duck Farms in Long Island, N.Y.
"We knew people would start eating duck at home if they could buy it at the grocery store, something they couldn't do 10 years ago," said Corwin, who also is secretary of the Duckling Council of America.
Most of these birds are raised on commercial farms, not hunted in marshes. Farmed birds are larger and, because their diets are controlled, they have a milder flavor and are not the fat-laden nightmares some Americans might recall.
"More people are eating these birds because of health reasons.
