Patrick Collins was born in New Zealand in 1968. At the age of 19 he travelled to England and attended the Cordon Bleu School where he completed an Honours Degree
In 1990, armed with his degree and his rather fancy schoolboy French, he spent many years working across Europe for some of the most respected restaurants in Paris, London and Amsterdam. He spent one year working for Blues Agency in London and worked as a Butler at Chequers - the summer residence of the British Prime Minister of the time, Baroness Margaret Thatcher.
Patrick later joined the staff on the ocean liner, QE II, where he worked in a ‘Kosher' restaurant for six months. For the next two years he spent his time working for the American Luxury Shipping Company, servicing a fleet of ships out of Miami and New York.
At the age of 29, Patrick decided to head back to New Zealand via Sydney however he fell in love with the city and decided to call it home. He began writing food articles as well as food styling and creating recipes for various publications including The Sydney Morning Herald, Gourmet Traveller, Australian Table, New Idea, Good Taste, Marie Claire Lifestyle, Elle Cuisine, Easy Entertaining and Vogue Entertaining Australia.
Patrick is the food editor on Channel Seven's SURPRISE CHEF. He has also presented on several cooking series including ‘Australian Living', ‘By Design', and ‘5 Star Cooking' and has appeared alongside Lisa Wilkinson and Duncan Armstrong on Channel Seven's THE MORNING SHIFT. During his time cooking Patrick has seen a lot - from the inside of the Queen Mother's handbag to the shenanigans of the world's celebrities like Vivien Westwood, Vidal Sassoon, Princess Anne and the late Princess Margaret.
For the last two years Patrick has run a popular cooking school in the Hunter Valley offering day classes and a more intensive weekend course for locals and Sydneysiders alike.
Patrick is now Food Editor for New Idea. According to him, it's the best job he's ever had as he can work from his home studio in Surry Hills, which he shares with his cat, Missy, and dog, Rollo. -
