Kathleen Marie Collins, community involvement coordinator for the CSLC, said one problem with food drives is the lack in nutritionally valuable food. She said the CSLC rents two plots of land at Koppel Farms where volunteers help grow fresh produce for the food bank at the center.Items such at tomatoes, cucumbers and carrots are available for people to pick from at the food bank, she said. "Usually, the middle of summer is when we need more people because we have to take care of the vegetables," Collins said.

"We work with the community and students to put together projects for the community, which students are very interested in doing," said Kathy M. Collins, community project coordinator for the CSLC.

Most of the projects where students can work with senior citizens are at nursing homes or assisted living facilities.
