    The venture signals a re-emergence into the Rochester dining scene for Jay Cohen, the former chef and co-owner of the Rio Bamba who left the Alexander Street restaurant two years ago shortly after it made its menu and dining room more casual and changed its name to Bamba Bistro.Cohen will act as One's executive chef and general manager.

    Jay Cohen is a self-taught chef born and raised in Rochester, New York.His career in restaurants began over three decades ago (while still in high school) when he worked for a neighborhood catering firm.Upon graduating, he turned his full attention to his chosen career, and by his early twenties had worked his way to executive chef positions in both Rooney's and Edwards, Rochester's top two restaurants at the time.Knowing there was more to learn, Jay moved to New York City in 1987.

    The chef/owner (whom I just HAD to meet after such an unexpectedly wonderful meal) was Jay Cohen (REALLY!), who had been a sous chef under David Bouley in the grand old days at the original Bouley.
