Chef Vince Cessna

The first ‘victim' is head chef, Vince Cessna.
...
That is not true with Valley Brook Country Club's head chef, Vince Cessna.
"My family has always been in construction. When my brother and dad went out - I always stayed home with my mom and my grandma and I'd always end up cooking," the Ohio native said.
That is how it all began.
Cessna remembers when he was around five years old rolling pasta, ravioli and noodles with his family.
According to www.chef.com, pasta is quite an easy recipe to handle - 2 large eggs, one and 1/4 cups of all-purpose flour and a pinch of salt. The hard, yet enjoyable parts to Cessna and his Italian family are the kneading, rolling and cutting endured to create the different types of pasta.

During spare time from the kitchen, Cessna likes to explore the internet and attend food shows to get new ideas and look at different menus.
"My accent is always on quality, preparation and presentation. We try to do menus that appeal to the eyes and tastebuds, just real simple and elegant," he said.
When Cessna is not concentrating on his career, he can be found spending time with his three children, Abigail, 8, Annabelle, 5, Vincent, 3, and his wife, Darla.
...
It's got a park for the kids," Cessna said.
Spending time with his family is extremely important to this Valley Brook chef. This summer instead of going to the beach like they had planned, the family stayed in the Pittsburgh area and just spent the whole week together doing something fun.
"We spent each day as a family with the kids . . . all day long," he said.Activities included going to different parks and the zoo.
"Any possible moment, any possible minute, we spend with the kids," Cessna said about himself and Darla.

After two years at Walsh, Cessna decided to try out chef school in downtown Pittsburgh.
After graduating from the Pennsylvania Institute for Culinary Arts, he traveled to the Bay Hill Country Club in Orlando, Florida to do his externship. He must have liked the country club atmosphere, because in March 2003, he joined the Valley Brook kitchen staff.
Cessna interviewed at a couple of different places, but chose Valley Brook for mainly one reason - Jim Zeh.
...
"He has been a chef for a long time and I thought it would be a good learning experience to work with him," Cessna said.
...
Eddy Chopak, who works in the kitchen with Cessna aspires to be a singer.
...
"He actually has a song out," Cessna explained.
...
Everyone listened to it and head chef, Cessna, who enjoy country music, said it was good.
"It's just such a good group of people," he said about the people he works with and the members he treats with his creations.
...
Vince Cessna definitely found a good home for his talent and his family here in southwestern Pennsylvania.
