   Multi-tasking is an essential part of Karl Cassida's job.
   
   Among Cassida's duties as kitchen manager at Symposium Café are overseeing food orders, preparation and cooking, hiring and scheduling employees, and a myriad of other tasks. Cassida is in charge of other employees in the kitchen also, such as cooks, servers and food-runners.
   
   "This job is one I never meant to have, but one that I truly enjoy," Cassida said.

   We sold four of these on Father's Day and will continue to do so for a while," Cassida said.
   
   Cassida, a native of the Philippines, worked at Romano's Macaroni Grill in Greenville for the past seven years. He began there as a server and worked his way up to a line cook.
   
   Cassida said his job entails a large amount of coaching.

   When Cassida accepted the position, he knew he'd be taking on much more than cooking; there are also the 60-hour work weeks.
   
   "As kitchen manager, I do sometimes cook, but I mostly oversee the food going out to the guests, which is also known as expediting, and I am in charge of making sure the quality of the food is exactly what it should be and making sure that the food has been properly prepped," Cassida said.
   
   "I also do a large amount of paperwork, such as invoices from food orders that we receive each week," Cassida said.
   
   Cassida said this process ensures the food is fresh daily and has been properly prepped.
