John Cassano, who won an excellence award with his work at Cassano's restaurant in Cherry Hill, NJ in 1996, is now chef and general manager of the Trattoria Parma in Medford, NJ. The restaurant, in the shopping center next to Ceriello, the best place for retail steaks in southern New Jersey, has a menu featuring items like tuna pomodore, fresh arugula gorgonzola and jumbo lump crab salad, and a variety of entrees based around risotto. Cassano, energized with his new responsibility, said the restaurant was busy and had a wait on a recent Wednesday night.
