In the past , a considerable quantity of work has been carried out on the chemistry of various types of isinglass finings and their relative merits , but little work has been performed on the optimisation of finings usage.
Optimisation of finings usage has the potential to improve beer clarification times , lower sediment volumes and en-hance sediment 'resettleability'.

After graduation Ken Burrell joined BRF International where his main interest was Beer Clarification. He has recently moved to Whitbread Research & Development where he works as a development engineer , concerned mainly with dispense equipment. Ken is a member of the Institute of Brewing , and a graduate member of the Institution of Chemical Engineers. He has an MEng degree in Chemical and Bioprocess Engineering.
