   Paul Bouchard, General Manager Paul oversees all operations at Toscana and both Toscana to Go locations in Trolley Square and Pike Creek. He began his career in restaurants at Toscana during a time when there was a core group of young enthusiastic servers, many of whom are still in the business, as restaurateurs and managers.
   
   Paul left Toscana to become director of catering at St. Joseph's University and General Manager of Spring Haven Country Club before running his own restaurant, The Queen Bean. He returned to become TTG's manager before taking over the reigns of the entire organization.

   Bouchard joins Toscana.
   
   Toscana To Go , the carry-out gourmet shop just two doors from its parent Toscana , has expanded its offerings to include a cafe and espresso bar.
   
   The new Toscana To Go is under the management of Paul Bouchard. The graduate of Salesanium and the University of Delaware was first attracted to the restaurant business as a way to pay for his education. Early experience on the wait staff of Toscana led Bouchard to discover his own aptitude for fine cuisine.
   
   In 1994 , after three years at Toscana , Bouchard accepted the position of Director of Catering at St. Joseph's University on Philadelphia's Main Line. He moved on to become the Food and Beverage Manager for the Springhaven Country Club , then returned to Wilmington as chef and co-owner of the Queen Bean.
   
   Toscana To Go , cafe style , will serve its customers with china and silver and offer a menu that goes beyond Toscana's foods to go. Sandwiches include combinations like warm goat cheese with sundried tomatoes and sauteed spinach or the Caprese , with fresh tomato , basil and mozzarella cheese.

   Toscana's general manager, Paul Bouchard, got a call last month from a TV studio saying they'd like to profile me for a TV show featuring success stories. While it was exciting to be invited to be on the show, it struck me as being understandable. Perhaps the producer had seen some of my work on the small screen and was intrigued. "But wait till you hear this," Paul said.
