Toscana To Go , the carry-out gourmet shop just two doors from its parent Toscana , has expanded its offerings to include a cafe and espresso bar.
The new Toscana To Go is under the management of Paul Bouchard. The graduate of Salesanium and the University of Delaware was first attracted to the restaurant business as a way to pay for his education. Early experience on the wait staff of Toscana led Bouchard to discover his own aptitude for fine cuisine.
In 1994 , after three years at Toscana , Bouchard accepted the position of Director of Catering at St. Joseph's University on Philadelphia's Main Line. He moved on to become the Food and Beverage Manager for the Springhaven Country Club , then returned to Wilmington as chef and co-owner of the Queen Bean.
Toscana To Go , cafe style , will serve its customers with china and silver and offer a menu that goes beyond Toscana's foods to go. Sandwiches include combinations like warm goat cheese with sundried tomatoes and sauteed spinach or the Caprese , with fresh tomato , basil and mozzarella cheese. -
