Chef Richard Bottini has been working at Six Tables for 18 months.
Three months ago, he bought out the owners and took over the restaurant, which opened in 2001 and features French-style cuisine.
He said the restaurant, 4627 Henderson Blvd., won't change much, except that his personality will come out more.
"I'm going to focus on the whole experience," Bottini said. "The food, the atmosphere and the experience."
Six Tables is just that, six tables. There are five such restaurants in the state. The original opened in Dunedin eight years ago. The others are in Largo, Gulfport and Boca Raton.
"This was a time in my life I decided I was ready for a bigger challenge," said Bottini, who also worked at the Palma Ceia Golf & Country Club and was executive chef of a South Florida yacht club before coming to Six Tables. "I'm looking forward to owning my own business. This is a great first business to own."
There are three employees: Bottini, a waitress and a kitchen aide. Bottini said he will remain chef.
"I'm on the phone a lot more than I was," he said.
