    Arancibia, an executive chef at the Excalibur for the past 11 years, has used his culinary and life experiences to give back to the community.One of his first volunteer efforts was in 1979 while living in Topeka, Kan., where he helped employ people with Down's Syndrome.And this year he hopes to follow through on his resolution and continue serving the community.He would like to raise money to aid burn victims.

    He proposes to offer his culinary services for fund-raising dinners similar to the ones he had for the Ronald McDonald House before it was built.

    Arancibia, 49, enrolled the help of local chefs who volunteered their time and cooked seven-course meals for the annual fund-raiser three years in a row to help build the Ronald McDonald House, which opened in 1998.

    He was proud of the support the chefs had shown, receiving three times the amount of volunteers he needed.

    "When you see those children, people want to get involved," he says."It's just overwhelming, how good you feel doing things like that."

    Arancibia, who came to America from Argentina in 1976, speaks on career day at elementary and middle schools.

    "I love children," says the father of two daughters."Education and children is probably one of the priorities in my life."

    He often speaks at schools located in low-income neighborhoods, offering motivation to the students.He thinks having various careers and backgrounds represented is beneficial to the students.

    Arancibia will bring students into the hotel and help better prepare them for a career in the culinary field.

    He hopes that more people will get involved in helping the community.

    "There are many, many needs here," he says."If more people would get involved, it would be a lot easier.

    Although he volunteers a lot of his time, he hopes to do more this year and in the future.

    "Sometimes I think I don't do as much as I should," he says."If there is a will...there is a time."
