Sodexo Inc., the contractor for St. Joseph Medical Center's food program, has seen its food costs rise over the last year and passes those increases along to the hospital, said Tamie Frable-Newman, general manager of food and nutrition services for Sodexo.The increases have been more drastic in the last few months, she said, but she declined to give specifics.As a result, items that have experienced the biggest price hikes â€" such as rice â€" are not featured as often among the cafeteria specials, she said.Food managers must also constantly return to the lessons they learned in "Food Services 101," she said."It's all about being efficient and eliminating waste," she said, even if that means checking trash cans to make sure employees aren't throwing out too much usable food.
