Most of us will recognise Sean Connolly as the Executive Chef at The Morrison Bar and Oyster Room.  But the truth is, this is just one of his global ventures.  Hailing originally from Yorkshire and commencing his cooking career when he was just 13, Sean has won numerous cooking accolades over the years.  Today, he is well and truly embraced as a 'celebrity chef'.

Sean Connolly is one of Australia's and New Zealand's most well respected and recognised chefs. With a wealth of experience that spans the globe he is a true visionary that never says no to an opportunity to share his love and passion for wonderful produce and honest food.
His love for food began in Grandma Esthers' kitchen in his birthplace of West Yorkshire. Her kitchen was the place to be and it is here that the foundations were laid for his amazing journey as a Chef. She taught him warmth, generosity, humility, how to be imaginative and most of all how to have fun in the kitchen.
Sean's formal career as a chef started when he took on a Chefs Apprenticeship at The Pennine Hilton, Ainley Top Leeds. He did this from the ages of thirteen to sixteen and then completed his apprenticeship at various restaurants throughout the UK.
Upon becoming a qualified chef his career set sail on the world famous luxurious cruise ship the QE2. According to Sean this is when his lifelong passion for caviar began!
Sean arrived in Australia in 1988 on a working holiday visa. He fell in love with our weather, amazing produce, growing food scene and decided not to leave. Working in various Sous Chef roles at high-end hotels such as The Boulevard and the definitive Park Lane (now Sheraton on The Park) he was mentored by renowned chefs such as Dietmar Sawyer and Liam Tomlin. During this time he learnt much about multicultural cuisines and techniques as well as how to manage a kitchen.

1995 Sean was offered the role of Executive Chef of Astral restaurant at Star City Casino. It was here that he led his team at Astral to earn consecutive chefs hats from 2007 to 2011, winning accolades such as SMH Good Food Guide Chef of the Year in 2008 and launching the casual restaurant 'Seans Kitchen' in the Star City Casino.
Now an acclaimed chef in 2009 he hosted the 13 part series on SBS called "My Family Feast", a celebration of Australia's love of multicultural food and family life. The show won best TV show at the 2010 Australian Food Media Awards, plus best TV series for food and wine culture at the world TV Food & Wine Festival. He also released the "My Family Feast" cookbook to coincide with the launch of the series and won best Celebrity Chef cook book in the world at the 2011 Paris book fair, beating international stars like Nigella Lawson.
Sean left Star City Casino in 2010 to pursue international opportunities and his growing TV career. This led him to New Zealand where in 2011 he, together with Skycity Auckland opened the ?multi-million dollar restaurant called 'The Grill by Sean Connolly'. This was made into a 6-part documentary called 'Under The Grill' which documented Seans journey, armed with a 4 million dollar budget and a hundred day deadline to create a world class restaurant from scratch. His documentary was well received with 39% of the country watching the documentary and discussions underway for the sequel to be filmed. The restaurant received rave reviews and in 2012 won Best Restaurant at the prestigious New Zealand Cuisine Awards.
Sean continues to be the face of many brands. Such Restaurant Associates which is owned by the Compass Group and represents venues such as the Town Hall and Taronga Zoo. Sean is also one of the faces of Lyndey Milans company Naked Flame. When he can Sean donates his time to both charity and industry organisations to raise money for charities such as The Benevolent Society and Table4Ten.
Always ready for the next challenge, 2012 was a busy year for Sean. He started his own Restaurant Consulting arm of his brand, development and production of his own range of home-cooking Chef Sean Connolly products, this website and the opening of The Morrison, a New York style restaurant and oyster bar in the heart of the Sydney CBD.

Sean Connolly is a scream. He has the cheekiest smile and the most boyish charm, and this was totally evident when he joined us in the studio for last week's radio show on 89.7FM Eastside Radio. I have been very fortunate to have had some of Sydney's top chefs on my show this past year and while all of them have been great interviews, none have made me laugh as much as Sean.

Sean is a master in the kitchen and has been the Head Chef of Astral, Star City's fine dining restaurant since 1995. The food at Astral is imaginative and his superior technique is evident in his dishes. The private dining room, which boasts 270-degree views, and has hosted many celebrities, is where Sean creates his magic. Here he is able to offer a bespoke menu fit for royalty.

Sean has just embarked on his latest venture called Sean's Kitchen (see the review click here). This new and challenging endeavour has made him busier and happier than ever. He is master of his own destiny and moves around his restaurants like a magician making sure that everything is in perfect harmony.
His introduction into food as the only boy in the Home Economics class (I did ask if he did this just to get the girls) has placed him on a great path, and as with most of my guests, he thinks he is very lucky, "I never work a day, I just spend everyday doing what I love."
While being interviewed Sean had a momentary lapse of reason and when teased about his answer he let out a cheeky grin and we all doubled up laughing... definitely not a man to take things too seriously. He is one of my favourites... especially as I am a confirmed chef groupie. I have no doubt that Sean will continue to entertain us with his fabulous food and his easy charm and I look forward to the next installment of his career.
