2008, Scott Callais joined the restaurant as general manager and brought more than 30 years of experience in the restaurant industry with him. Callais has managed to elevate one of the best restaurants in Baton Rouge to become one of the most talked about eateries in the South. With his extensive hospitality management experience and restaurant work history, Scott Callais fits in well at Juban's where he is surrounded by fine wine and proper tableside service. Callais grew up in Cut Off. His father, World War II Navy Veteran Harold Callais, worked as a commercial fisherman while his mother Emelia was a retail clerk who also helped manage the accounts. Callais worked with his father on the boats every summer in order to pay his college tuition. "My father always told me he was going to teach me how not to be a fisherman so that I would do something else than do what he had to do all of his life," said Callais. Callais, an LSU graduate, began his restaurant career in the 1970s, waiting tables and bartending. At the age of 24, he catapulted his way to the position of general manager at Ever Loving Saturday's Restaurant on Corporate Boulevard. Over the next two decades, he served in leadership positions at several restaurants and even opened his own fine wine cafe, Grand Cru Wine Shop Deli and Catering, where patrons could find an exotic mix of wines, meats and cheeses. Unfortunately, Baton Rouge experienced an economic recession that led to the shop's early closure after only two years of business, and Callais found his way back to the management life in 1993 when he was hired as general manager of Ruth's Chris Steakhouse in Baton Rouge. In 2008, Callais became general manager at Juban's, where he remains today.
