I first met Satomi Furugaki when I was a judge for the International Sake Sommelier Competition in LA in 2006. She was the point person for the entire event and I quickly learned that Satomi has a sake soul and a Dai Ginjo heart. Recently, I asked her to critique some Izakaya's (sake pubs) in LA - this will be featured in the March Newsletter - and asked her if she would put her sake sommelier and sake aficionado skills to test by writing a little piece on her favorite Junmai sake. Satomi is a Shugaku Kohshi (sake instructor), but more importantly she is a drinker of sake and that is my favorite quality about this wonderful voice in the sake industry.

Satomi is a Los Angeles representative of Sake Service Institute (SSI) (www.sakejapan.com), the sole licensing organization of sake sommelier certification. She is also an SSI certified Kikisake-shi (sake sommelier) and Shugaku Kohshi (sake instructor). She teaches sake classes at California Sushi Academy (www.sushi-academy.com), first sushi chef training institution out of Japanese, and writes tasting comments for several sake breweries.

One of my favorite new faces on the sake scene is Satomi Furugaki from Los Angeles. Satomi is the "Sake Instructor" for the California Sushi Academy.
By day and by night she is a sake goddess seeking out the sake scene of Southern California. She has written a "Sake Spotlight" for this Newsletter and recently I asked her to take a look at the "Izakaya" movement in LA. As you all know an Izakaya is essentially a sake pub with a twist on cuisines and specialties that revolve around sake.

Satomi Furugaki joined CSA to launch and manage the sake tasting curriculum for sushi students and others interested in cultural and gastronomical exploration of sake through tasting and food paring.Satomi combines her extensive knowledge of sake with her years of experience as a professional journalist and cross-cultural educator to advance what is for her a personal mission: to demystify this wonderful beverage, the very essence of Japanese tradition and regional pride, for an ever-expanding world market.
Also as a Los Angeles contact of the Tokyo-based Sake Service Institute (SSI), Satomi has successfully directed the 2nd World Kikisake-shi (sake sommeliers) Competition's Western US Regional Championship in Los Angeles in September 2006.
Satomi is also a sake tasting comment writer for several sake breweries as well as a sake consultant for Los Angeles restaurants including Bar Hama Los Angeles.
