Also on the team were Whitehaven News photographer Mike McKenzie and Whitehaven's Zest Restaurant owner Ricky Andalcio, who would be assisting with the creation of the recipes for both the book and the documentary.
Ricky would be in charge of looking after the produce we would collect throughout the day and transporting it to Hertfordshire to prepare for the recipe shoot at Jean Christophe's home. Ricky Andalcio had travelled down the day before, with all the ingredients we had collected in Cumbria specially cool-packed in Ricky's 4×4. Jean Christophe, Ricky and the Food Academy team had a very early start, preparing and photographing recipes for the book.
