Karen is a food service and aged care specialist dietitian and has worked in the aged care industry for over 15 years. Karen has presented at conferences nationally and internationally on topics ranging from menu design, nutrition specification in food service, and nutrition for the elderly. Karen has worked for Queensland Health as a rural aged care dietitian, with the Rural Allied Health Team and done extensive work for Queensland Meals on Wheels delivering training in nutrition and menu design. Karen is currently the Resident Support Services Manager and Dietitian working for Nambucca Valley Care an aged care facility on the Mid-North Coast of New South Wales and is currently undertaking a PhD with the University of Queensland examining menu design and delivery of optimal nutritional care in residential aged care. Karen has had numerous experiences within the fields of nutrition and foodservice.These have included managing food services, numerous clinical roles as a hospital Dietician, directing and managing a busy regional hospital nutrition department and a foodservice consultant for the delivery of services in aged care.Karen's qualifications include a Bachelor of Science, Honours in Human Nutrition, Graduate Diploma in Nutrition and Dietetics, a Masters of Health Science Management and is currently a PhD student at the University of Newcastle, examining the coeliac food supply.Karen runs a private practice, specialising in gastrointestinal intolerances, runs foodservice training, demonstrates cookery, menu audits and writes cookbooks.
Throughout her career she has had the opportunity to present at conferences in Australia and overseas on topics ranging from menu design, nutrition specification in foodservice, nutrition for meals on wheels, functional foods, coeliac disease and nutrition in the elderly.Karen is the editor of the Foodservice and Nutrition Journal, and one of the journal's main aims in to link food and nutrition together and promote food knowledge, preparation and good health.
